1 medium red onion
1/2 cup apple cider vinegar
1 cup room temperature water
1 Tbsp coconut sugar
1 1/2 teaspoons sea salt
Thinly slice the onion and place in a reusable jar.
Pour vinegar and water into the jar, covering the onions.
Pour in sugar and sea salt.
Place the lid onto the jar and shake for approximately one minute, allowing the sugar and salt to dissolve.
Place the jar in the refrigerator for at least one day before consuming to allow onions to pickle. Onions will last for a couple of weeks stored in the refrigerator.
